Chicken in Mushroom Cream Sauce 0 Picture

Ingredients

  • 3-4 Chicken Breasts, cut into thin strips
  • 1 shallot, finely diced
  • 2 cups sliced mushrooms
  • 1/4 cup white wine
  • 1/2 cup chicken stock
  • 1 cup cream (don't use light cream)
  • 2 TB canola oil
  • 2 TB butter
  • Salt & Pepper
  • Rice

Preparation

Step 1

Heat skillet over high heat, add oil. Saute chicken (you may have to do this in two batches depending on your size of pan)

Turn chicken as necessary and remove from pan when cooked on all sides.

Reduce heat to medium. Add butter. Add shallots and mushrooms to pan. Sweat mushrooms and shallots until soft and the liquid in the pan has evaporated.

Add white wine and chicken stock, simmer until almost dry. Add cream and chicken, gently simmer until the cream starts to simmer (patience!).

Season with Salt & Pepper.

Serve over Rice.
