Breakfast Burrito / Omelet

These breakfast burritos are exactly that: breakfast burritos, and they’re as simple as it gets. Feel free to experiment to taste. I also skip the tortilla and make this like an omelet.

Ingredients
- Butter
- 2 eggs
- 1 tablespoon milk
- Lawry's seasoned salt & pepper
- Canned black beans, preferably low-sodium (I pour a can into a microwave safe Tupperware container)
- Shredded Monterey Jack cheese or Low fat shredded cheddar
- 1 (10-inch) whole-wheat tortillas (burrito-size)
- Reser's Baja Café Pico de Gallo salsa
- Rubber spatula & plastic turner
- Meat options
- Jimmy Deans lowfat turkey sausage patty
- leftover pork chops, steak, chicken (diced)
- Deli turkey or chicken
- Feel free to add in sautéed onions or peppers (leftover fajita stuff)

Preparation
Step 1
I use an omelet pan - but a small fry an will work too. Preheat skillet over medium low heat (3 setting on my electric stove).
Prep
Whisk together the eggs, milk and a sprinkle of Lawry's. Heat turkey sausage or diced meat for 20 seconds (High) in microwave. Heat can of beans in microwave safe Tupperware container 1-1/2 minutes or until hot. Heat other vegetables if using until heated in microwave. Keep handy by stove. Keep remainder refrigerated for another day.
To make burrito
Add tablespoon butter to the pan, it should melt and sizzle slightly, not burn! Scramble eggs until cooked through, about 3 minutes. Add a handful of cheese. Pour eggs over tortilla with 1 - 2 tablespoons salsa then layer with 1 - 2 Tablespoons of the black beans (and or other veggies) Roll up burrito-style and serve.
For omelet:
Add tablespoon butter to the pan, it should melt and sizzle slightly, not burn! add eggs and lift edges with spatula to get eggs to flow under cooked part. Lift edges while swirling pan to keep eggs flowing to sides. Push edges in with spatula to thicken slightly, let eggs set up for about a minute, shake pan gently, eggs should slide but not pull apart. When set so eggs are thickened but not runny, flip with turner, add cheese over entire omelet, add meat and other ingredients to top half away from handle. Remove from heat and slide onto plate while folding bottom half over top half. (you can also slide onto tortilla and fold over like a quesadilla.
