Ingredients
- SAUCE:
- 6 boned and skinned chicken breasts
- 1 cup flour
- 6 slices Swiss cheese
- 6 slices ham
- 2-3 beaten eggs
- bread crumbs
- 5 tbsp margarine
- 2 cups chicken broth
- 1/4 cup dry sherry or red wine
- 1/4 cup light cream
- 1 egg yolk

Preparation
Step 1
On each piece of chicken place a slice of swiss cheese and a thin slice of ham. Wrap the chicken around the ham and cheese. Dust chicken with a coat of flour. Dip each piece of chicken into beaten egg, then coat with fine bread crumbs. Fry chicken until lightly browned. Place pieces in a casserole dish Pour sauce over chicken and bake for 1 hour at 350 degrees.
Melt butter in saucepan on low heat Add flour and stir until light brown. Add broth slowly, ( CHICKEN CUBES MAY BE USED ) stirring constantly. Add sherry when sauce starts to thicken . Remove from heat. Stir cream into egg yolk and add to sauce. Continue to cook 1 minute or until thickened. Pour over chicken.
