Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 4 large eggs
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 6 medium apples, peeled and sliced
  • 1/2 cup apricot jam
  • 1/4 cup sliced almonds, toasted
  • 1 cup whipping cream

Preparation

Step 1

Preheat oven to 350F. Cream butter and sugar with an electric mixer. When it's light and fluffy, add eggs, one at a time and keep beating. Stir together flour, baking powder and spices. Stir into batter.

Spread half the batter in greased and floured spring-form pan. Arrange sliced apples over the batter, filling all the spaces. Don't be afraid to make a double layer. Top with remaining batter. Bake 50 minutes or until it tests done. Let cool 15 minutes before removing ring. Melt jam in a small saucepan and brush over cake, top and sides. Sprinkle with sliced almonds. Serve cold or at room temperature with whipped cream.
