  • Chicken breast fillets
  • 6 Tbsp gluten-free bottled caesar dressing
  • 8 Tbsp gluten-free packaged, seasoned bread crumbs
  • Salt and pepper to taste

Preparation

Step 1

1. Pound chicken cutlets to even thinness with meat mallet

2. Place chicken in pie plate; pour dressing over turning to coat well, cover and let marinate 30 minutes at room temp, turning occasionally

3. Spray non-stick jelly roll pan with cooking spray for no fat frying

4. Sprinkle crumbs on sheet of wax paper, press the marinated chicken into the crumbs, coating lightly on both sides

5. Arrange a single layer on pan

6. Bake at 450 for 10 minutes, turning once, or until golden brown and tender

7. Garnish with parsley and lemon wedges if you wish
