16/02/14 - Even Dan liked this and ate all of his dressing. He remarked that he liked the artichokes better cold - less messy to eat.
12/04/15-UPDATE - I happened to have about 2 ounces of deli chicken so I cut that up finely and added it to the existing dressing, along with some diced avocado so I've updated this recipe accordingly. You could still make it without the chicken if you didn't have it but do add the avocado.

Ingredients
- DRESSING:
- 2 medium to large artichokes
- 1 Hard-boiled egg, very finely chopped
- 1/4 avocado, very finely chopped
- 2 ounces chicken breast, very finely chopped (you could also try finely minced smoked salmon)
- 1 medium shallot, minced
- 3 tbsp. Mayo
- 3 tbsp. Greek yogurt
- 1 tbsp. Dijon
- 1 tsp. Red wine vinegar
- 1 tsp. Olive oil
- 2 tbsp. buttermilk
- 2 tbsp. Minced fresh parsley (Optional)
- pinch dried tarragon, to taste
- salt and pepper to taste

Preparation
Step 1
*Trim* artichokes and cut in half. Remove chokes and place in a bowl or microwave container in water with lemon. Microwave on high for 5 - 7 minutes, depending on size of artichokes. Drain well and refrigerate (face-down on paper towels) until ready to serve.
Combine dressing ingredients, thinning with a little buttermilk or cream if too thick. Cover and refrigerate.
To serve, spoon dressing into two bowls (easier) or into chokes themselves (messier) and serve.
