Pecan Pie Muffins (wonderful)

These little jewels are wonderful, calories not so much. Figured that they are about 515 per muffin when making 6 of this recipe as I did. Would probably be better to make 8 then 386 calories per muffin. Need to put pan under muffin pan, they will bubble over from all the butter.

- 1 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 2/3 cup softened butter
- 2 eggs beaten

You can use any size muffin tin for this recipe. Recipe makes 5 giant muffins, 8 regular muffins, or 12 mini muffins. Grease your tins with Pam or Baker's Joy.
Preheat oven to 350 degrees. In a medium bowl, stir together brown sugar, flour, and pecans. In a separate bowl, beat the softened butter and eggs together until smooth. Stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin tins...about 2/3 full. Bake for 20-25 minutes. (I baked them in regular muffin tins @19 minutes and they were perfect. Depends on your oven).
