This old family recipe, handed down from generation to generation, originated before today's health-conscious cooking. But when LaVonne feels homesick, she cooks up a big batch and says, "Hang the cholesterol and calories!"

- Steak
- 1 large round steak, tenderized and cut in serving-size pieces
- 1/2 cup white flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 eggs, well beaten
- Oil for cooking
- Gravy
- 1 tablespoon flour
- 1 teaspoon beef bouillon
- 1 cup water or milk

Preparation
Step 1
For steak: Preheat oven to 200 degrees F. Mix flour with salt and pepper. Coat each piece of meat with egg, and then dredge both sides in flour mixture. Heat 1/4 inch oil in large, heavy frying pan. When oil is hot, gently place each piece of meat into pan, being careful not to crowd pieces. Cook until well browned on each side. Put meat into oven to keep warm while you prepare gravy.
For gravy: Pour excess oil from pan, leaving about 1 tablespoon. Over low heat, add flour and brown well. Dissolve bouillon in water or milk. Remove pan from heat, and gradually pour bouillon mixture into pan, stirring briskly and continuously. Scrape the pan well while stirring to loosen meat particles. Pour gravy into boat and serve with meat.
Hint: Mashed potatoes or biscuits are the true Texas complements, according to LaVonne. Her father loved it with baby black-eyed peas and hot peppers.
