Ingredients
- 2 onions, thinly sliced
- 2-3 assorted bell peppers, sliced
- 2 sm to med zucchini, julienned
- 1 cup sliced baby bella mushrooms
- 2 Tbsp olive oil
- 1 Tbsp fresh lime juice
- Salt and freshly ground pepper to taste
- Warm tortillas and assorted toppings

Step 1
Preheat grill.
Toss vegetables with olive oil, lime juice, salt and pepper. Grill vegetables, tossing frequently, until tender and grill-marked, about 8 minutes.
Serve on warm tortillas with your favorite fajita toppings.
