Ingredients

  • 2 onions, thinly sliced
  • 2-3 assorted bell peppers, sliced
  • 2 sm to med zucchini, julienned
  • 1 cup sliced baby bella mushrooms
  • 2 Tbsp olive oil
  • 1 Tbsp fresh lime juice
  • Salt and freshly ground pepper to taste
  • Warm tortillas and assorted toppings

Step 1

Preheat grill.

Toss vegetables with olive oil, lime juice, salt and pepper. Grill vegetables, tossing frequently, until tender and grill-marked, about 8 minutes.

Serve on warm tortillas with your favorite fajita toppings.
