This is a lighter, slightly sweeter cornbread (with a cakey texture). It's the recipe that Marie Callender's uses (or did, years ago) .... makes a big 9x13" pan ~ great with honey butter

Ingredients

  • 1 package yellow cake mix
  • 1 15-oz. package corn bread mix
  • 1 12-oz. can creamed corn
  • 2-1/2 cups milk
  • 3 eggs

Preparation

Step 1

Combine mixes; add all other ingredients and beat well. Pour into 2 greased or sprayed 9” pans (or 1 14x16” pan). Bake at 350 for 30-60 minutes (depending on size pan you use) or until lightly browned and tester comes out clean. Serves 20

Can be served with honey butter (beat softened butter with some honey)

Optional: Can add 1-2 seeded & finely diced jalapeno peppers, if you like ~ plus about 1 tsp chili powder
