Ingredients
- 4 - 7 oz chicken breasts
- salt & pepper
- 1 t. each dried oregano & basil
- 2 roma tomatoes, sliced thinly
- 1/4 c sun dried tomato strips in oil
- 4 mozzarella cheese slices
- 12 basil leaves
- 4 cloves garlic, mince or fine chop
- 1/3 c balsamic vinegar
- 2 T brown sugar

Preparation
Step 1
1. Preheat over to 350. Cut a pocket about 3/4 way thru chicken.
2. Season chicken with salt, pepper, herbs. Pour 1 t sun dried tomato oil over each, rubbing some season in pocket.
3. Fill each with 2 slices tomato, 2 t. dried tomato strips, one slice cheese and basil leaves.
4. Seal with 3-4 toothpicks.
5. Heat 2 t of oil in skillet and cook over med-high heat 2 min each side until golden
6. which cooking mix garlic, vinegar, sugar. pour mixture into pan around chicken bring to a simmer stirring occasionally, until glaze is slightly thickened 2-3 min.
7. transfer pan to oven cook 10 - 15 min.
