Ingredients
- Crust:
- 1 cup flour
- 1/4 cup powdered sugar
- 1/2 cup (1 stick) unsalted REAL butter, chilled (cut in pieces)
- Top layer:
- 2 eggs
- 3/4 – 1 cup granulated sugar
- 3 TB lemon juice
- 3/4 tsp grated lemon rind (optional)
- 2 TB flour
- 1/2 tsp baking powder
- powdered sugar (to dust on top of cooled bars)

Preparation
Step 1
Whisk or sift together flour and powdered sugar; cut in butter until mixture resembles coarse meal (pastry cutter or forks). Pat into ungreased 8” square pan. Bake at 350 for 20 minutes. … Meanwhile, beat eggs until blended and slowly add sugar, beating. Blend lemon juice and rind into egg mixture. Sift/whisk together 2 TB flour and baking powder; stir into egg mixture. Pour over slightly cooled crust. Bake at 350 for 20-25 minutes. Cool. Dust extra powdered sugar on top. Cut into 20 bars.
Variation: LIME juice and grated lime peel (plus 1-2 drops green food coloring) can be substituted for lemon
