Ingredients

  • 1 medium sweet potato (about 12 oz)
  • 1 beet (about 8 oz)
  • 1 medium white potato (about 5 oz)
  • 1 large parsnip or carrot (about 6 oz)
  • 2 tbsp canola oil
  • 2 tbsp grated Parmesan cheese
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • Pinch of fresh ground pepper
  • ketchup, ranch dressing, sour cream for dipping (optional)

Preparation

Step 1

Heat oven to 375 degrees.
Peel the vegetables. Slice into 1/8 inch rounds. Place the vegetables in a large bowl. Add the oil and toss until well coated.
Arrange on a single layer on 2 large baking sheets.
Combine the Parmesan cheese, salt, garlic powder, oregano, and pepper in a small bowl. Sprinkle over vegetables.
Bake until crisp and light golden brown, about 25 min. Serve with dipping sauce as desired.
