Tropical Chicken Salad

This is one of those dishes that I forget about; and then when I do make it, I'm always surprised at HOW GOOD it is! The combination of the fruit with the chicken is so different ~ makes a good summer lunch or light supper (but wouldn't be good in sandwiches)

Ingredients
- 2 cups cubed, cooked chicken (just simmer a whole
- breast in some water about 30-45 min)
- 1 cup pineapple chunks (drained, if canned)
- 1 cup green seedless grapes, halved
- 1 small can mandarin oranges, drained
- 1/2 cup chopped macadamia nuts (optional)
- mayonnaise, salt & pepper to taste

Preparation
Step 1
Combine all ingredients, using just enough mayonnaise to moisten and hold it all together. Toss or mix lightly
