Ingredients
- 1 1/4 c cake flour
- 1 1/2 c sugar, divided
- 1/2 tsp baking powder
- 6 egg whites, white separated
- 1/2 tsp salt
- 1 tsp cream of tartar
- 1/4 c cold water
- 1 tsp lemon extract

Step 1
Sift together flour, 1 c sugar, and baking powder.
Beat 6 egg whites, salt, tartar until stiff. Add 1/2 c sugar, do not under beat.
Combine egg yolks, water and lemon extract and beat until thick. Add dry ingredients, beat 1 minute.
Fold egg whites into yolk mixture. Pour into large angel food pan and bake 40-50 min at 350.
