- 1 C fat-free milk
- 6 Tbsp plain dried bread crumbs, preferably whole wheat
- 2 Tbsp ground pecans
- 1 tsp paprika
- 1 tsp celery seeds, crushed
- 1/2 tsp ground cumin
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- Freshly ground pepper, to taste
- 2 (3/4 lb) bone-in chicken breast halves, skinned and cut crosswise in half

1. Adjust the racks to divide them into thirds. Preheat the oven to 400 degrees. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
2. Pour the milk into a medium bowl. Combine the bread crumbs, pecans, paprika, celery seeds, cumin, onion powder, salt, nutmeg, and pepper on a piece of wax paper.
3. Dip the chicken pieces in the milk, then coat them on all sides with the bread crumb mixture, pressing to make sure the spices adhere to the chicken. Discard the excess bread crumb mixture.
4. Spray each piece of chicken lightly with nonstick spray, then place bone-side down, on the baking sheet. Bake in the lower third of the oven until browned and an instant-read thermometer inserted in a breast registers 170 degrees, about 35 minutes. Let the chicken stand about 5 minutes before serving.
