Ingredients
- 2 1/2 pounds zucchini
- 3 tablespoons olive oil
- 1/4 cup fresh lemon juice (from 1 lemon)
- 3/4 teaspoon sea salt
- 1/2 teaspoon fresh grated black pepper
- 1/2 cup shaved Parmesan
- 1/2 cup toasted pine nuts

Preparation
Step 1
1. Use a vegetable peeler to shave zucchini into ribbons. Place in a large bowl.
2. Gently toss zucchini with olive oil, lemon juice, salt and pepper. Top with shaved Parmesan and pine nuts and serve immediately.
