Ingredients
- 1-1/2 cups water
- 3 cubes chicken bouillon
- 1 10-oz. package frozen chopped spinach (thawed)
- 1/4 cup flour
- 3 cups milk (or 1/2 & 1/2 ~ or cream)
- 1 TB minced onion
- salt and pepper to taste
- Can swirl some sour cream through the top before serving

Step 1
In medium saucepan, combine water, bouillon and spinach; bring to a boil and cook just until spinach is tender. … Melt butter in large saucepan over medium heat. Stir in flour and cook about 2 min (watch to be sure it doesn’t burn) ~ gradually whisk in milk (to make a roux). Season with onion, salt & pepper. Cook, stirring constantly, until thickened; stir in spinach mixture; heat until hot throughout. Serves 4
You could also substitute broccoli for the spinach (and a dash of nutmeg)
