7-Up Cake

A great POUND CAKE, made with a can of 7-Up ~ could also use Cherry 7-Up, Dr. Pepper, Root Beer or Orange Crush

Ingredients
- 3 cups flour
- 1/4 tsp salt
- 5 large eggs
- 3 cups sugar
- 1 cup unsalted REAL butter, softened
- 1/2 cup vegetable shortening (oil or Crisco)
- 1-1/2 tsp vanilla extract
- 1/2 tsp lemon extract
- 1 cup 7-Up

Preparation
Step 1
Preheat oven to 325. Grease/spray a LARGE 12-cup Bundt or tube pan. Combine eggs, sugar, butter, shortening & extracts in large mixing bowl; beat at medium until light and fluffy,
scraping sides occasionally (about 5 minutes). Reduce speed to low; add dry ingredients and soda; beat at low until well blended. Pour into prepared pan. Bake at 1-1/2 hours or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Invert onto wire rack, remove pan & cool completely.
When cool, put on plate and drizzle glaze over the top
Glaze: Whisk together 1 cup powdered sugar with 1 TB EACH lemon and lime juice, until smooth and drizzle consistency (can adjust by adding more sugar/juice)
Makes a VERY LARGE cake …. Serves about 16
