Ingredients

  • 2 cups packed kale leaves
  • 1/2 cup shelled pistachios
  • 2 Tbsp grated Parmesan cheese (or a "Mock" Parmesan)
  • 1 tsp minced garlic
  • juice from half a lemon
  • 1/2 tsp kosher salt
  • 1/4 cup olive oil
  • 1/2 cup water from cooked pasta

Preparation

Step 1

Place all ingredients except for pasta water in a food processor or blender. Mix until smooth.

Combine with cooked pasta and pasta water.
