Ingredients
- Coconut Frosting:
- 1 C carrot pulp from juicing (approx)
- 1 C raw rolled oats (I'm not picky, I use regular rolled oats)
- 1/2 C honey
- 1/4 cup coconut flour
- 1/4 cup fine coconut flakes
- 1/4 cup coconut oil
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 C raisins
- flesh of 1 young coconut
- 1/4 cup honey
- 1 tsp vanilla

Preparation
Step 1
Cookie dough:
Blend all but raisins up till well mixed and forms a ball (or gets sticky-ish) and then blend in raisins for two or three seconds more. Not enough to pulverize them. Form into balls and squash into patties, dehydrate for 2 hours on a fine mesh sheet.
Coconut Frosting:
Blend in processor or vitamix till smooth.
