Ingredients

  • 1/3 cup crumbled reduced fat blue cheese
  • 1/4 cup + 1 Tbsp fat free mayo
  • 1/4 cup fat free sour cream
  • 1 tsp white wine vinegar
  • 3/4 cornflakes
  • 1 lb chicken tenders
  • 2 TBSP buffalo wing sauce
  • 5 cups lightly packed romaine
  • 1 cup tender watercress sprigs
  • 2 large tomatoes
  • 2 scallions

Preparation

Step 1

1. Preheat oven to 450. Spray small pan with nonstick spray.
2. To make dressing, whisk together blue cheese, 1/4 cup of mayo, the sour cream and vinegar in small bowl until blended.
3. Spread cornflake crumbs on wax paper
4. Toss together chicken, buffalo sauce, and remaining 1 Tbsp mayo in a bowl. Coat chicken with crumbs. Place chicken on prepared pan. Bake about 5 min per side.
5. Toss together romaine, watercress, tomatoes, and scallions in serving bowl. Place chicken on top of salad.
