CUBE STEAK****Beef Dip Sandwiches

22/02/14 - This recipe originally included peppers, onions and mushrooms, copious amounts of butter and a sherry-based sauce. That was all overkill, however, this method of cooking the minute steak was fabulous and resulted in melt-in-your mouth meat so I've tweaked the recipe to something we will enjoy.

Ingredients
- 1 tablespoon butter
- 1 tablespoon EVOO
- 9 ounces Cube Steak
- Kosher Salt
- Freshly Ground Pepper
- 2 cloves Garlic, Minced (Optional)
- 1/4 cup Sherry or red wine
- 1 can consome, no water
- 1 Tablespoon Worcestershire Sauce
- 1 - 2 dashes Tabasco (To Taste)
- 3 - 4 whole Deli Rolls

Preparation
Step 1
*Freeze* the cube steak for 20 minutes or so and cut into 1/4" strips against the grain. *Lay out* on a plate, season with salt and pepper and cover and refrigerate until serving time.
*Heat* butter and olive oil in a large skillet over medium-high heat. *Brown* the strips of cube steak in batches, about 1 to 1 1/2 minutes per side. *Remove* to a bowl when brown and keep warm.
*Add* garlic to the pan and cook for 30 seconds or so. *Pour* in the sherry or red wine to deglaze the pan, then add consome, Worcestershire and Tabasco. *Cook* over medium-high heat for five minutes, to blend flavours.
Toast halved rolls until golden brown and crisp. *Spoon* meat onto the buns and serve with the sauce in a bowl on the side.
