HONEY-MUSTARD SALMON

Ingredients

  • 2 Tablespoons Dijon mustard2 tbsp Dijon mustard
  • 1 Tablespoon honey
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 4 pieces salmon
  • For salad
  • 1 Gala or Red Delicious apple
  • 2 Tablespoons seasoned rice vigegar
  • 1 " evoo
  • 1/8 tsp. salt
  • 1/8 tsp ground black pepper
  • 1 bag baby lettuces
  • Lemon for garnish

Preparation

Step 1

Preheat broiler. In small bowl, mix mustard, honey, S&P. Place salmon,skin side down, or rack in broiling pan. Spoon the mustard glaze on the fillets. Place pan in broiler 5 - 7 inches from heat source and broil salmon 8 minutes. or until fish flakes easily when tested with fork.
Prepare the salad: Core and cut apple into thin wedges. In large bowl, mix vinegar, oil, salt and pepper. Add baby lettuces and apple wedges and toss to coat. Arrange salmon and salad on plates. Garnish with lemon slices.
