Lace Cookies/Pecan Snaps

Ingredients
- 1/4 c. packed brown sugar
- 1/4 c. margarine or butter
- 1/4 c. maple syrup (not pure)
- 1/2 c. finely ground pecans
- 1/3 c. all-purpose flour
- 1 tsp. vanila
- Optional: melted chocolate to "swirl" on top.

Step 1
In a small saucepan combine brown sugar, margarine or butter, and maple syrup. Cook and stir over medium heat till the sugar is dissolved and margarine is melted. Remove from heat. Stir in pecans, flour and vanilla.
Line a cookie sheet with foil; lightly grease the foil with margarine or butter. Drop the batter from a level teaspoon about 5 inches apart onto the cookie sheet. (Only bake 5-6 cookies at a time because you need to shape them quickly before they harden.) Bake in a 350 degree oven for 8 to 10 minutes till bubbly and deap golden brown.
Let stand on cookie sheet on wire rack for 1 minute. Immediately remove cookies from foil, flipping with a spatula onto the counter with flat side to the inside, roll cookies aroudn the greased handle of a wooden spoon, letting the bowl of the spoon, keeping the rolled shape.
Cool on a wire rack. (IF cookies harden before you can shape them, return them to the hot oven for 1 minute or till softened.) Repeat with remaining batter. Makes about 3 dozen cookies.
