Quinoa & lentil salad with broccoli

Ingredients
- 1 tbsp olive oil
- 1 onion finely diced
- 1 cup uncooked quinoa
- 2 cups broth of choice
- 2 tbsp balsamic vinegar
- 1/4 cup fresh parsley, chopped
- 2 cups broccoli, cut into bite-sized pieces
- 1 cup canned green or brown lentils, rinsed and drained

Preparation
Step 1
Heat oil in pan over medium heat and sauté onions for 1 min. Add the quinoa and sauté for another minute before adding broth. Bring to a boil and let cook 20 mins, stirring occasionally, or until the quinoa is completely cooked. Remove the quinoa from the heat and immediately add the broccoli and lentils then cover the saucepan and let sit for 10 mins. Add the balsamic vinegar and parsley and stir. Refrigerate until ready to serve.
