Ingredients
- 1 bottle Lawry's Baja Chipotle or Mesquite 30 minutes marinade
- 4 boneless chicken breasts, pounded to even thickness
- 8 oz. Velveeta, chopped
- 1 can RoTel diced tomatoes and green chilies
- rice (optional)

Preparation
Step 1
1. Pour marinade over chicken and marinade in the refrigerator for 30 minutes or over night.
2. Grill or cook chicken until done.
3. Combine Rotel and Velveeta in a medium bowl.
4. Heat in the microwave on high in 30 second intervals until cheese is melted.
5. Pour over chicken and serve.
6. Serve with rice if desired
