  • 6 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1/3 cup Splenda
  • 1 tablespoon unsweetened cocoa powder

Step 1

Preheat oven to 350 degrees and spray 2 cookie pans with vegetable spray.

Add the egg whites to a mixing bowl and beat on high speed for about 1 minute until frothy. Then add the remaining ingredients and continue beating until soft peaks form.

To make the meringues, use heaping tablespoons of the mixture laid in rows on the sprayed sheet pans, leaving a couple of inches of space in between each one. The recipe makes about 48 meringue cookies.

Bake for 40 to 45 minutes until browned, then remove from the cookie sheets, and cool on racks. These cookies are best served fully cooled. They may be stored on the counter in a covered container or ziploc bag for up to 1 week.
