Ingredients
- 2 cups flour
- 2 tsp baking soda
- 2 cups sugar
- 2 tsp cinnamon
- 1 1/2 cups cooking oil
- 2 tsp vanilla
- 4 eggs
- 2-7 oz jars strained carrots
- 1-8 oz can crushed pineapple
- 1/2 cup nuts, optional
- Frosting
- 1/2 cup butter
- 1-8 oz pkg. cream cheese, softened
- 1 tsp vanilla
- 3 1/2 cups confectioner's sugar

Preparation
Step 1
Preheat oven to 350
Sift dry ingredients in a bowl. Make a well in the center and add oil, eggs, vanilla, and carrots, beat well.
Fold in Pineapple and nuts. put into greased 9 x 13 x 2 pan. Bake for 40-50 minutes. Allow to cool then frost.
