  • Filling:
  • 2 cups Chipotle Cheese
  • 2 cups shredded carrots
  • 2 cups mango, diced
  • 2 cups chopped spinach
  • 2 cups sliced cremini mushrooms
  • 2 ripe Hass avocado, diced
  • 1/2 cup fresh cilantro
  • 1/4 cup chopped green onions
  • 1 T chili powder
  • 3 T cold-pressed extra virgin olive oil
  • Garnish:
  • 1/4 cup Pine Nut Sour Cream
  • 1/4 cup Avocado Lime Sauce
  • 1/4 cup Red Bell Pepper Puree
  • Chipotle Cheese
  • 2 cups pine nuts
  • 1 1/2 cups water
  • Juice of 1 lemon
  • 1 Roma tomato
  • 1 large dried chipotle pepper
  • 2 t chili powder
  • 2 cloves garlic
  • 1 t sea salt
  • Pine Nut Sour Cream
  • 2 cups pine nuts
  • 1 1/2 cups water
  • Juice of 2 lemons
  • 1 Roma tomato
  • 2 T agave nectar
  • 3 cloves garlic
  • 1 t Himalayan salt
  • Avocado Lime Sauce
  • 2 ripe Hass avocados
  • 4 oz cold pressed extra virgin olive oil
  • 1 cup young Thai coconut water
  • 2 cloves garlic
  • Juice of 2 lime
  • 1 t Himalayan salt
  • 1 t agave nectar
  • 1 dash cayenne pepper
  • Red Bell Pepper Puree
  • 6 red bell peppers
  • 6 oz cold-pressed extra virgin olive oil
  • 2 cloves garlic
  • 1 t sea salt

Preparation

Step 1

Toss all filling ingredients well in a medium sized mixing bowl
Fill each tortilla with 1/4 of mixture and roll tightly
Garnish each with Pine Nut Sour Cream, Avocado-Lime Sauce and Red Bell Pepper Puree
Add any remain gin fresh cilantro or chopped green onions to the top

Makes 4 servings

Chipotle Cheese
In a high powered blender, combine all ingredients and blend until rich and creamy
Helpful tip: If you'd like this even spicier, add 1 t cayenne pepper and another 1/2 dried chipotle pepper
Makes 2 cups

Pine Nut Sour Cream
Blend all ingredients well in a high powered blender until thick and creamy
Great for use on sandwiches, to top soups and even as a salad dressing
Makes 2 cups

Avocado Lime Sauce
Blend all ingredients well in a high powered blender until a rich, creamy sauce forms
Enjoy
Makes 2 cups

Red Bell Pepper Puree
Blend all ingredients well in a high powered blender until a thick puree forms
Some flavorful options include adding 1 t cayenne pepper or 2 t chili powder for a spicier blend, or 2 T Italian herbs for a Mediterranean-style sauce
Makes 1 cup
