Ingredients

  • 6 boneless, skinless chicken breast halves, each about 5oz in weight
  • 1 medium green bell pepper, chopped
  • 1 medium onion, chopped
  • 15 1/2 oz can tomatoes, chopped, or 2 cups fresh tomatoes, dices and peeled
  • 1 Tbsp Italian seasoning
  • mozzarella, or parmesan cheese, shredded

Preparation

Step 1

1. Place chicken in well greased 9 x 13 baking pan
2. In mixing bowl, stir together green pepper, onion, tomatoes, and seasoning.
3. Spoon vegetables evenly over chicken
4. Cover. Bake at 350 for 45 minutes
5. With a sharp knife makes 2-3 vertical slashes in thickest part of each chicken breast. (Do nt cut the whole way through.) Baste with pan juices.
6. Cover. Return to oven and continue baking 15 more minutes, or until thermometer inserted in center of chicken registers 165.
7. Top chicken with cheese.
8. Return to oven for 5-10 minutes, or until cheese melts
