Ingredients
- 2 egg whites
- 1/8 teaspoon salt
- 1/8 teaspoon cream of tartar
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 6 oz semisweet chocolate chips*
- You can substitute crushed peppermints. I use half the amount as it makes the cookies very chewy.

Step 1
Preheat oven to 300 degrees. Line cookie sheets with parchment paper (do not use wax paper).
Beat egg whites, salt, cream of tartar and vanilla until soft peaks form. Slowly add sugar. Continue beating until stiff peaks form.
Fold in chocolate chips.*
Drop by rounded teaspoonfuls onto prepared cookie sheets.
Bake for approximately 25 minutes or until firm and slightly browned.
Cool a few minutes before removing from cookie sheets and transferring to wire racks. (Makes approximately 3 dozen cookies)
