Ingredients
- 1 doz. Eggs
- 1 qt. milk
- 1/2 cup Sugar (When doubling recipe, don't double sugar, use 3/4 c)
- 1 tsp. Cinnamon
- Pinch Salt

Preparation
Step 1
Bring Milk to a boil in heavy saucepan.
Add sugar
Beat eggs, add cinnamon and salt.
Slowly stir beaten eggs into slow boiling milk-mix gently until completely coddled-only a yellowy water substance remains.
Pour into cheesecloth, in colander
Hang and let drain about 1 hour.
Refrigerate
