  • 1 plank pork spareribs
  • Cajun style spices
  • Heavy duty aluminum foil
  • Water

Step 1

Trim large chunks of fat from ribs. Leave thin layers for flavor. Sprinkle top side of ribs generously with Cajun style spices. Rub in well. Put 3/4 inch of water in the bottom of a heavy roasting pan. With foil resting on water, tightly seal the water in the bottom of the pan creating a water bed.
Place the ribs on the foil. Do not puncture foil. Cover the ribs tightly with another sheet of foil. Let spices marinade 2 hours at room temperature.

Preheat oven to 450 degrees. Bake ribs for 1 1/2 hours.
Remove from oven. Drain liquid from both layers of foil.
Brush ribs with your favorite sauce. Bake at 350 degrees for 15 minutes.
NOTE: Reduce time to 45 minutes for baby ribs.
