    cup white rice

    TB oil

  • 2

    cups water

  • 1/2

    tsp salt

  • 2

    TB soy sauce

  • 2

    eggs

  • 2

    scallions (chopped)

Directions

Heat oil in a 2-quart pan. Sauté rice until golden brown, Add water and salt and bring to a boil. Add soy sauce, Reduce flame, cover pan and simmer for 15-20 minutes, until water has almost evaporated. In a separate frying pan, scramble two eggs. Add eggs and scallions to rice.
