Rhubarb Cream Pie

May also be made as a double crust pie. Sprinkle top crust lightly with sugar. Bake at 400 F for 20 minutes. Lower temperature to 375 F for 25 minutes.

- 1/4 cup sugar
- 4 tbsp flour
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 egg, beaten
- 1 cup heavy cream
- Dash nutmeg
- 4 cups diced rhubarb
- 1 (9-inch) unbaked pie shell
- Whipped cream or ice cream, optional

Step 1
Mix first seven ingredients very well and add rhubarb. Stir and pour into a 9-inch unbaked pie shell. Sprinkle with cinnamon. Put into preheated oven at 400 F. Bake 35 to 45 minutes, until set. Serve warm or cold with whipped cream or ice cream.
