Mini Cheesecakes

Ingredients

• 16 oz Cream Cheese
• 1 cup sugar
• 2 eggs
• 1 tsp Vanilla
• 12 Vanilla wafers or other small cookie
• Any fruit pie filling

Preparation

Step 1

Cream cheese in mixing bowl. Gradually add sugar beating until light and fluffy. Add eggs 1 at a time beating well after each addition.

Using a cupcake pan, line with cupcake liners. Place vanilla wafer at bottom on liner. Fill cupcake pan with cream cheese mixture.

Bake @ 350 for 20 minutes. Leave in pans and refrigerate overnight. Top with fruit pie filling.
