Santa Fe Chicken
- SANTA FE CHICKEN
- 1 large onion, chopped
- 1 T. butter
- 1 1/4 c. broth (1 whole can)
- 1 c. salsa
- 1 c. uncooked long grain rice
- 1/8 t. garlic (opt)
- 4 cooked, boneless chicken breasts, cut into bite size pieces
- 3/4 c. shredded colby cheese (can use cheddar)
- Parsley to garnish
Saute onion in butter until clear.
Add broth and salsa and bring to a boil.
Add rice and chicken and cover. Simmer 10 minutes then stir.
Cook 10-15 minutes longer then remove from heat. Sprinkle with cheese, cover and let cheese melt 5 minutes. Garnish with parsley.
