Mousse: French Chocolate

I made this for my husband and I, but we were so full from dinner we didn't eat it until later. This recipe makes enough for 4 servings, but the servings are plentiful. Anyway, I was so full from dinner I didn't eat mine, and later that evening my teenage daughter arrived with several of her friends. I asked if they liked to try some...GONE!

Ingredients
- 6 oz. semisweet baking chocolate, chopped
- 3 tablespoons unsalted butter, softened
- 3 eggs, separated
- 1/2 teaspoon cream of tartar
- 1/4 cup plus 2 tablespoons sugar
- 1/2 cup heavy cream, cold
- 1/2 teaspoon vanilla extract

Preparation
Step 1
Place the chocolate and butter in a bowl over a saucepan with simmering water. Melt the chocolate and butter together and stir until smooth. Remove from heat and cool slightly. Then add egg yolks to the chocolate, 1 by 1, beating with a whisk until incorporated. Set aside.
In another bowl, beat the egg whites until foamy. Add the cream of tartar, gradually whisk in 1/4 cup sugar until stiff peaks form.
In another bowl, beat heavy cream until foamy and thickened up. Add 2 tablespoons of sugar and vanilla. Whip until soft peaks form.
Gradually and gently fold the egg whites into the chocolate mixture, then fold in whipped cream. Divide mousse into 4 glasses. Cover and chill several hours. Garnish with whipped cream and chocolate shavings.
