Chipotle Chile Con Carne

Ingredients
- 3 1/2 tablespoons Pantry Club Gourmet Chipotle Chile Seasonings
- 3-4 tablespoons water
- 4 strips bacon
- 1 pound lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 1/2 cups water
- 1 (14 ounce) can diced tomatoes
- 1 (14 ounce) can red kidney beans, drained and rinsed
- 1 tablespoon freshly squeezed lime juice
- 1 teaspoon cornstarch dissolved in 2 tablespoons water
- Grated Cheddar cheese and chopped red pepper for garnish

Preparation
Step 1
In small bowl mix chipotle chili seasoning with 3-4 tablespoons water so that chili forms a light paste. Set aside.
Cook bacon on medium heat heat until crisp. Set aside on paper towel. Crumble bacon into bits.
Increase skillet heat and add back in 1 tablespoon bacon fat, then cook and crumble beef.
Add chopped onions, garlic and chipotle chili paste and cook for 2-3 minutes.
Into large pot, put onion, chili mixture, beef, bacon bits, 2 1/2 cups water, tomatoes, kidney beans and lime juice. Heat chili on medium heat until it comes to a simmer. Then reduce heat to low, cover and simmer 1 1/2-2 hours.
Mix cornstarch powder into a little water to dissolve cornstarch and add to chili to thicken if needed.
Sprinkle with grated cheddar cheese and chopped red pepper. Serve with cornbread, tortilla chips and/or rice.
