Ingredients
- 10 oz bittersweet or semi sweet
- chocolate
- 10 T butter
- 6 large eggs, separated
- 2/3 c sugar
- 1/2 c whipping cream
- 6 oz chocolate

Butter and flour 10" cake pan with parchment paper.
Melt chocolate and butter over hot water. Cool 10 minutes.
Whisk egg yolks and sugar.
Beat egg whites until stiff peaks form. Fold in egg yolk mixture and melted chocolate.
Put in pan and tap out air bubbles. Bake 35 min. Transfer to rack to cool.
Heat whipping cream and 6 oz chocolate until melted and smooth. Pour over top of cake.
Refrigerate 2 hours.
