- 1 Tbsp light olive oil
- 4 cloves garlic, minced
- 1/2 cup sliced onions
- 1/2 cup roasted red peppers, drained
- 1 cup diced tomatoes
- 1/2 bag Six Cheese Tortellini (#846), prepared

- 2 cups fresh baby spinach
- 1 Tbsp chopped fresh herbs (thyme, parsley, basil)
- 1 Tbsp shredded Parmesan cheese
- Pepper to taste

Preparation
Step 1
1. Saute garlic and onions in olive oil over medium-high heat for 4 to 6 minutes.
2. Add roasted peppers and tomatoes. Cook 2 to 4 minutes.
3. Stir in prepared tortellini, spinach, herbs and cook till spinach wilts.
4. Sprinkle with Parmesan and pepper before serving
Tip: Use fresh diced zucchini in place of spinach.
