Ingredients

  • 2 cups flour
  • 1 cup sliced almonds
  • 1/2 tsp. pure almond extract
  • 1 cup fresh or frozen cranberries (chopped)
  • 1 1/4 tsp baking powder
  • 1/2 tsp. kosher salt
  • 2 large eggs
  • 1 cup sour cream
  • 1/4 granulated sugar
  • 1/2 cup canola oil

Preparation

Step 1

Heat oven to 350. Coat 8 1/2 in x 4 1/2 inch loaf pan with Pam.

IN a medium bowl, whisk together flour, baking powder, and salt.

In a large bowl, whisk together eggs, sour cream, sugar, oil and almond extract

Gradually add flour mixture to egg mixture, stirring until just incorporated. Fold in the almonds

Transfer batter to prepared pan and bake until golden brown and a wooden pick inserted into the center comes out clean, 55-65 minutes. Let cool in pan for 5 minutes before transferring to a wire rack to cool completely.
