- Refried Beans, black or reg
- Red Enchilada Sauce
- 2 eggs per person
- Cheese

Preparation
Step 1
Heat oven to 300*
Wrap tortillas in foil, place in oven
Heat Beans & boil enchilada sauce
Drop each egg into sauce with a spoon
Cook 5 min for soft yolk
7 min for firmer yolk
Spread Beans & sprinkle cheese
on 1/2 of tort, fold in half
Scoop eggs onto torts with sauce
