Ingredients
- 3 eggs
- 1/2 c sugar
- 1/8 tsp salt
- 2 c milk
- 1 tsp vanilla
- 1/8 tsp nutmeg
- 1/8 tsp cinnamon
- Pastry for crust
- 9 " Pie Pan

Step 1
Preheat oven 450 degrees
Beat eggs until light and foamy using hand beater.
Add sugar, salt, vanilla, nutmeg and cinnamon - mix well
Add milk slowly - mix well
Roll pie crust and line a 9" deep pie plate
Pour custard into shell.
Place pie on foil or sheet to catch any possible spills/run-overs
Bake 10 minutes in hot oven (450 degrees)
Then reduce heat to moderate oven (350 degrees) - DO NOT REMOVE PIE FROM OVEN WHILE REDUCING HEAT
Bake for about 25 minutes longer or until done.
Test with a knife, which when gently inserted in center will come out
clean
Cool on baking rack
