Ingredients

  • 3 c Unbleached Flour
  • 4 Large Eggs, Beaten
  • 1 tsp Salt
  • 1/2 c Water
  • 1/4 tsp Nutmeg
  • 1/4 c Butter

Preparation

Step 1

Stir flour, salt, & nutmeg
Pour eggs & 1/4 water into middle of flour mixture, beat with wooden spoon
add enough water to make the dough slightly sticky, yet keep elastic & stiff
Using a Spatzle Machine or colander with medium holes, press the noodles into large pot of boiling sat water
Cook 5 minutes - until they rise to surface
Drain noodles on paper towels
Brown noodles in melted butter over Low heat
