Ingredients
- 10 cups spring mix or mesclun greens
- 1 cup chopped carrots
- 1/2 red onion, thinly sliced
- 1/2 cup slivered almonds
- 1/2 cup veggie bacon bits
- 1 cup dried cranberries
- 1 medium Granny Smith apple, cored and chopped
- 1/2 to 1 cup crumbled feta cheese or shredded Cheddar cheese
- 1 (.7 ounce) package dry Italian dressing mix
- 1/4 cup balsamic vinegar
- 1/2 cup extra-virgin olive oil
- 3 tbsp water

Preparation
Step 1
Pour salad greens in a large bowl. Add carrots, onion, almonds, veggie bacon bits, dried cranberries and apple; sprinkle with cheese.
Prepare dressing according to package instructions using balsamic vinegar, olive oil and water. Toss before serving and pass salad dressing at the table.
