Ingredients
- 1 c. uncooked rice
- 3 medium zuccini, sliced
- 2-3 small cans ortega chilies
- 12 oz Jack cheese, grated
- 1 large tomatoe, sliced
- 2 c. sour cream
- 1 tsp. oregano
- 1 tsp. garlic salt
- 1/4 c. chopped green pepper
- 1/4 c. chopped green onion
- 2 T. chopped parsley

Preparation
Step 1
Cook rice in 2 cups liguid. In buttered 9X13 baking dish, place cooked rice; cover with chilies. Sprinkle half cheese; arrange zuccini slices over cheese. Add tomatoe and sprinkle with salt. Combine sour cream, oregano, garlic salt, green pepper and green onion. Spoon evenly over tomato layer. Top with remaining cheese. Bake 350 for 40-45 minutes.
