- 2 cups whole almonds
- 1 cup sugar
- 4 egg whites, room temperature
- Pinch of salt
- 1/2 tsp vanilla extract

Preparation
Step 1
Preheat the oven to 300 degrees. Line 3 baking sheets with parchment paper or nonstick foil.
Pulse almonds and sugar in a food processor until nuts are finely ground.
Beat egg whites until frothy, add the salt, and beat until stiff. Fold in the almond mixture and the vanilla.
Spoon walnut sized dabs onto the baking sheets 1 1/2 inches apart. Bake for 30 min, rotating halfway through until lighlty golden.
Cool on sheets for 1 min then transfer to racks to cool.
