Ingredients

  • 4 hearts of romaine lettuce
  • 6 oz chorizo, cooked and crumbled
  • 2 roma tomatoes, diced
  • 1/2 cup crumbled queso fresco (optional)
  • Avacado Dressing
  • 2 avacados
  • 1/8 c. olive oil
  • 1/4 c. water
  • Juice and zest of two large limes
  • 2 t. dried cilantro
  • 2 t. garlic powder
  • salt and pepper

Preparation

Step 1

Place all dressing ingredients in a blender.

For the salad, cut the romaine lettuce into large wedges. Place on plate and drizzle the dressing over the lettuce. Then top with chorizo, tomatoes, and queso fresco crumbles.
